<p>While music, art and fashion are a drawcard for wider interests  served up with plenty of creativity in many cellar doors alongside the  region&#8217;s stylish whites the food served beside the region&#8217;s refreshing  whites also is becoming increasingly exotic.</p>
<p>Burgers, barbecues  and the Mediterranean flavours remain popular, and now one of the Hills&#8217;  top gastronomic destinations is having more influence on regional  tastes too.</p>
<p>Stirling&#8217;s Sticky Rice Cooking School, which  specialises in offering ethnic cuisine cooking classes, is hosting one  of the Crush Festival&#8217;s several special events, a double-header of  professional chef cooking tutorials and banquet on Saturday, January 28,  each with separate Middle Eastern and Thai-Vietnamese themes.</p>

<p>Four South Australian tourism developments, worth a total of $2.4  million, will go ahead with the help of State Government grants.</p>
<p>The developments include adding luxury eco villas to an Adelaide Hills cooking school, creating a<br />
world-class restaurant in a Barossa winery, and redeveloping a railway station to benefit an iconic<br />
Flinders Ranges train.</p>
<p>Tourism Minister Gail Gago says the four $50,000 grants are part of  the Government’s ongoing investment through the South Australian Tourism  Commission’s (SATC) Tourism Development Fund.</p>
<p>The fund assists tourism operators across the state who are building new and innovative tourism<br />
accommodation, attractions and tours, as well as revitalising and updating existing tourism ventures.</p>
<p>“Tourism, directly and indirectly, employs more than 53,000 South  Australians, including many in regional areas, and tourism is often an  economic lifeline for our state’s regional economies,” the Minister  said.</p>
<p>Among the grant recipients is award-winning Sticky Rice Cooking  School, which will be constructing two new Asian-themed luxury eco  villas, increasing the availability of high-end accommodation in the  Adelaide Hills, and creating a full food and wine holiday experience to  encourage visitors to stay<br />
longer in the region.</p>
<p>Grant recipient Claire Fuller, who owns Sticky Rice Cooking School, says she and her team have<br />
been working closely with the SATC to promote food and wine tourism  in the Adelaide Hills and South Australia for several years now.</p>
<p>“The new villas are part of our big picture plan,” Ms Fuller said.</p>
<p>“We are delighted the SATC shares our vision and will be helping us to attract more people to our cooking classes.</p>
<p>“This will also give people the opportunity to stay in the region and experience all the attractions of the Adelaide Hills.”</p>

<p>I love watching people cook.</p>
<p>People always do things differently to me, in ways I had never  considered. So I always learn about something new – a new ingredient, a  new technique, a new cooking style – and it sends me straight back to my  kitchen feeling inspired and energised.</p>
<p>So I was delighted to take part in the Thai Seafood Banquet class at <a href="http://www.stickyricecookingschool.com.au/">Sticky Rice Cooking School</a> a couple of weekends ago.</p>
<p>Sticky Rice Cooking School is run by Claire Fuller, who decided there  was a place for a cooking school that offered more than a celebrity  chef demonstration without the formality of a professional cooking  course. Her school offers people a chance to really get their hands  dirty, to learn about the culture as well as the food, to leave knowing  where to buy the ingredients used (and which brands are recommended) and  exactly how to cook the featured dishes at home.</p>
<p>Chefs at the school include David Thompson (ex Darley Street Thai, author), Katrina Ryan (ex <a href="http://www.rockpool.com/sydney/">Rockpool</a>), Kurma Dasa (Australia’s vegetarian guru, author), Kelly Lord (<a href="http://www.spirithouse.com.au/">Spirit House</a>), Genevieve Harris (ex Nediz), Ali Seedsman (ex <a href="http://www.penfolds.com/en/Dining/Magill-Estate-Restaurant.aspx">Magill Estate</a> and <a href="http://www.universalwinebar.com.au/">Universal Wine Bar)</a>, Jordon Theodoros (<a href="http://www.aquacaf.com.au/">Aquacaf</a>), Brian Smith and Allie Reynolds.</p>
<p>Classes are typically four hours long and  usually showcase a type of cuisine  - Asian or Middle Eastern – or a  particular country’s cuisine. So classes are offered in  Thai,  Vietnamese, Nepalese, Laos, Cambodian, Malaysian, Japanese, Indonesian  Indian, Moroccan and Lebanese food.</p>
<p>I’d chosen the Thai Seafood Banquet class as I was keen to learn more  about Thai ingredients and cooking techniques. I adore Thai food – we  actually honeymooned in Koh Samui – and I cook Thai seafood salads and  curries (usually from pastes) at home a lot during Summer. So I was  curious to see if my take on Thai food was close to authentic.</p>
<p>The class was taught by Chef Yukiko Anschutz (ex Shiki at The Hyatt),  who was encouraging and informative. At the beginning of each session  she took us step by step through the recipe, explaining how the  individual ingredients should be prepared. Here she is below teaching us  one of her useful tips - use a teaspoon to peel ginger rather than a  knife or peeler as they remove too much of the ginger with the skin.</p>
