OZ Asia- Moon Lantern Festival w Jordan Theodoros
Sticky Rice Cooking School have been approached by the Festival Centre’s OZ Asia Committee to participate in the popular Moon Lantern Festival in Elder Park on Sept 22nd.
Sticky Rice Cooking school will be in the Demo Kitchen with one of their Top Professional Teaching Chef’s Jordan Theodoros as he demonstrates a Spicy Thai Laarb Salad.
Jordan is the current owner of Award Winning restaurant Aquacafe in Goolwa ( Best New restaurant 2009) and was himself awarded Chef of the Year in 2006 when he was Head Chef at the Melting Pot.
Jordan’s travels have seen him traverse the globe on a regular basis and it was his passion and extensive knowledge of Asian cuisine which first caught the eye of owner Claire Fuller who offered him a Guest Chef teaching opportunity with the School when it first opened in Oct 2008. Jordan now has 2 new classes adding to the calendar starting with A Taste of Morocco on 20th October and then Mastering Vietnamese on 10th November. His fans will no doubt be at the FREE Demonstration on Sep 22nd to see him in action again. Jordan’s spot is at aprox 5.20pm.

Celebrity Chef Simon Bryant will be teaching 2 special Master Classes at Sticky Rice Cooking School on Saturday 23rd October and Sunday 24th October and the last few places are now on sale in the online calendar so be quick!
“I didn’t even have time to advertise or publicise these classes before they started to book out” says owner Claire and there are now only 7 spots left.
Simon was on Claire’s list of top Adelaide Chefs to approach when she first opened the Cooking School back in October 2008 but due to Simon’s previous exclusive contract with the large hotel chain Hilton he was unable to commit until now. “Simon has always insisted that he would love to teach at Sticky Rice Cooking School and indeed he helped promote us via 2 episodes on The Cook and The Chef with Maggie Beer” says Claire. Firstly he filmed a segment with Vegetarian Chef Kurma Dasa who regularly teaches at the Sticky Rice Cooking School and then Chef Yukiko Anschutz was filmed during her Asian Spice Classes.
“I’ve even been told by customers that Simon Bryant told them to come to a class here which is the most perfect kind of referral I could wish for” beams Claire.
As soon as Claire got news that Simon had left the Hilton back in February this year she was straight back onto him with an offer of a Master Class Guest Chef Spot in October…. and this time Simon accepted immediately.
I am really looking forward to not only meeting him ( although he is very easy to get to know on the phone) but also to learn from him in the kitchen says Claire. “I also think he has so much to share with us about the subject of sustainable produce for Adelaide cooks and hopefully I can help spread his teachings throughout our other classes.”
Simon passionately believes in using his profile to highlight Ethical Food issues, including the plight of local producers struggling with drought, animals being farmed unethically, using local seasonal food with less
environmental impact, the use of Australian native foods and the health and medicinal properties of food. Simon Says “The great proportion of our food comes in one way or another from the dirt that we stand on. One of the
greatest things you can do is share this food and respect how and where it came from by making informed responsible choices. More importantly, food should be as natural as when it came from the dirt, with as little harm and
interference in its growing and preparation as possible but, with a maximum of care.”
Claire suspects Simon has also got a very wicked sense of humour as did Michelin Starred Chef David Thompson who was at the school in November 2009. She is already smiling at the prospect of some good old banter and wit whilst on the job!
Simon’s Master Class will be guiding guests through a hands on four course menu focusing on ethical food choices. The emphasis will be largely on free range and or sustainable produce where the animals well being/ sustainability is of much importance as the flavours of the dishes. This is a class for the omnivore who wants to make respectful food choices and those who want to work alongside the highly respected Adelaide chef Simon Bryant. • Papaya and Mango salad with home dried SA Gulf Prawns. • Drunken corn fed free range chicken with pickled pak choy. • Twice cooked crispy Chinese free range pig belly. • Organic hand tapped small batch coconut palm sugar grilled Pineapple, candied peanuts, chilli sorbet.

Last week owner Claire was treated to a special lunch at renowned Sydney Restaurant Tetsuya’s. The lunch was celebrating the launch of Electrolux’s new Compact Steam Oven and Chef Tetsuya demonstrated how easy it is to create star quality food when you have the right tool for the job!
With French Champagne flowing Claire was introduced to the great Chef Tetsuya (pictured above) and also had the chance to meet other Cooking School owners from around Australia. Claire lost no time at all inviting Tetsuya to visit as a guest Chef at Sticky Rice Cooking School so we’ll keep you posted!
Most interesting to Claire was the the state-of-the-art about to be released induction wok ring or E:motion trivet that allows the user to cook with a round bottom wok on an induction cooktop. Tetsuya demonstrated how easy it was to cook large quantities of seafood in a flash without ’stewing’ all thanks to the space-like design of the Electrolux wok trivet. Claire’s enthusiasm caught the eye of Tetsuya as he demonstrated delicious seared salt and pepper scampi tails. To the envy of over 30 people, Tetsuya singled her out and walked straight up to Claire in the front row offering her his tasting fork! YUM………

NewsChristine Manfield Master Classes a Hit!
Christine Manfield’s Master Classes were a huge hit with customers and staff alike and the 3 day marathon in May 2010 was an exhilarating, adrenaline filled gastronomic delight.
Christine was a true professional with her clear communication, her precision for detail and her superb organisational skills. Her calm, gentle and kind manner was to be admired and applauded and all who worked with her during the classes were truly inspired.
None have been more inspired than volunteer Chef Samantha Neale who also assisted David Thompson during his visit to Sticky Rice Cooking School. Following on from her dedicated hard work and professional attitude Christine Manfield offered Sammie a job at Universal Restaurant in Sydney. Sammie had taken leave without pay from her Adelaide restaurant Job in order that she could take part in the masterclasses with Christine. Her dedication was rewarded tenfold when the golden job opportunity was offered and we wish Sammie all the very best for her new life in Sydney.
After Class Owner Claire Fuller persuaded Christine to leave her mark on the cooking school as David Thompson had done before her. She cheekily drew a love heart around David’s message before adding her own special message to the Cooking School.

Chef Ali Seedsman will be doing 2 FREE cooking demonstrations at 11.30am and 3pm and will show you how to make BBQ Grilled Swordfish Skewers w Chamoula, Harissa , Baba Ganoush and Tahini Yogurt. Well today saw a very welcome albeit completely out of the blue surprise, drop into our Sticky Rice inbox!
We have been shortlisted nationally as 1 of only 6 businesses to be anonymously and independently selected by a panel of judges as finalists for the Travel and Tourism Awards 2009 run by the prestigious Weekend Australians Travel and Indulgence Section. The letter was another reason to celebrate and to say thank you to all our customers and professional teaching Chefs and staff that have made our product worthy of being shortlisted nationally by the panel of judges in our first year of business.
We will be featured in the paper on Sat Feb 6th as part of the lead up and voting to the final awards announcement in Feb 20th Issue and readers who vote will have a chance to win a set of luxury luggage from Melbourne’s Catherine Manuell Design and a selection of cookbooks from Lantern, an imprint of Penguin Australia.
